Sip of the Month: Pomegranate Chai Sparkling Mocktail
When you're in the mood for something aromatic and fruity with a hint of sparkle, this chai mocktail is the perfect sip! Made with minimal ingredients it's quick and easy to whip up in time for mocktail hour.

Pomegranate Chai Sparkling Mocktail
Serves 2

INGREDIENTS 

3 bags chai tea

1 cup boiling water

½ cup pure pomegranate juice

2 tsp fresh lime juice

1 ½ cups sparkling water

Ice

Pomegranate seeds, blueberries and fresh mint sprig for garnish


DIRECTIONS

Steep tea and cool. Steep 3 chai teabags in 1 cup of boiling water for 3 minutes. Remove the teabags and let cool. Pop in the fridge or freezer to speed this up. You can also make this ahead of time so it will have cooled by mocktail hour.

Add pomegranate and lime juice. Add your pomegranate juice and freshly squeezed lime juice to the cooled tea (lime juice can be left out for a less tart alternative). 
Shake and Pour. Shake the mixture over ice using a cocktail shaker – skip this step if you don't have a shaker and just separate the liquid evenly into 2 glasses.

Top with sparkling water. Add 1/2-1 cup sparkling water to each drink depending on glass size and taste. I like mine with 3/4 cup of sparkling soda.

Garnish – Garnish with pomegranate seeds, blueberries, ice and a sprig of mint!
