Sip of the Month: Matcha Whiskey Highball

Matcha isn’t just for tea or baking—it’s a surprisingly versatile ingredient for cocktails, too. With its earthy, slightly grassy flavour and vibrant green hue, matcha brings a unique twist to classic drinks. This Matcha Whiskey Highball pairs the richness of whiskey with matcha’s distinct character, finished with a kiss of honey for a touch of brightness. A festive and flavourful way to elevate any occasion!

Matcha Whiskey Highball
Serves 1

INGREDIENTS
2 ounces Japanese whisky (such as Hibiki)
1/2 ounce freshly squeezed lemon juice
1/2 ounce honey syrup
1/4 teaspoon matcha powder
4 ounces chilled club soda
1 lemon wheel, for garnish


INSTRUCTIONS
Add whisky, lemon juice, honey syrup, and matcha into an ice-filled cocktail shaker. Shake vigorously.

Pour into a chilled, ice-filled Collins glass. Pour the club soda into the shaker, swirl around to rinse, then stir into the glass.

Garnish with the lemon wheel.

• Note: Matcha powder tends to clump when mixed with liquid; to loosen any that’s stuck to the side of the shaker, swirl the club soda in the shaker before pouring it into the glass.
