      Because humour is what keeps us going, we are sharing a silly travel story that made us laugh out loud. Hopefully it will do the same for you!

      The Overdressed Turkey

      A passenger was booked on a Glasgow-bound EasyJet flight. Aiming to sidestep a $90 excess baggage fee, he donned every item of clothing in his second backpack – five pairs of pants, six T-shirts and four sweaters – before waddling onboard and jamming himself into a seat. Soon after takeoff, he threw up, was given oxygen and then collapsed with what was later diagnosed as heat exhaustion. 

      As Helene always says, "pack light and carry-on"!!

      Sip of the Month: Thai Basil and Kumquat Mojito

      As we look forward to travelling in 2022, we thought it would be fun to share a cocktail that brings the vibe of a tropical getaway home.

      Cocktails al fresco are served!

      Thai Basil and Kumquat Mojito

      THAI BASIL AND KUMQUAT MOJITO

      Serves 2

      INGREDIENTS

      For the Lime Simple Syrup

      1/4 cup fresh lime juice

      1/4 cup white sugar

      For the Thai Basil and Kumquat Mojito

      3 small lime wedges

      3 kumquats halved

      1/4 tsp sugar

      4-5 Thai Basil leaves

      8-9 mint leaves

      3/4 oz lime simple syrup

      1 1/2 oz clear rum

      Club soda chilled


      DIRECTIONS

      Lime Simple Syrup

      Combine lime juice and sugar in a small microwave safe bowl or small pitcher, stir and microwave for 30 seconds

      Remove from microwave, stir again to dissolve the sugar in the heated liquid. Microwave and stir as needed again to fully dissolve the sugar within the liquid


      Thai Basil and Kumquat Mojitos

      Add lime wedges, kumquats, sugar, Thai basil, and mint to a high ball glass.  Use a spoon or pestle to muddle the herbs with the sugar and citrus fruit so that the herbs are very fragrant

      Add ice to the glass and pour lime simple syrup and rum over top.  Stir to combine all ingredients evenly.

      Top with club soda to taste and serve!

      "This drink, inspired by a nineteenth-century British gin recipe, is an updated version of the original Old Tom gin cocktail with the addition of mezcal from Mexico for smokiness, vermouth for sweetness, and bitters for complexity. Old Tom gin is appreciated by contemporary bartenders because it’s considered a missing gin link, being a bit drier than Dutch jenever and a little sweeter than London Dry. It’s available in most well-stocked liquor stores, but if you have trouble sourcing it, opt for a drier gin, since this recipe already includes a sweet spirit. This is a fantastically elegant cocktail — so be prepared, your guests will most likely request more than one."

      Tom Cat Cocktail

      TOM CAT

      Serves 2

      INGREDIENTS

      2 oz gin

      2 oz mezcal

      1 ½ oz sweet vermouth

      3-4 dashes Angostura bitters

      Garnish of fresh orange or grapefruit peel, any pith removed

       

      DIRECTIONS

      In a large cocktail shaker filled three-quarters of the way with ice, combine everything but the garnish; shake well for at least 30 seconds or until the shaker is cold. Strain and pour into cocktail glass, serving immediately.
